She knew this Quinoa Crust would help me with my pizza craving while still keeping me on track with my healthy eating goals.
Preheat oven to 425 degrees. Cook the soaked and rinsed quinoa according to manufacturers instructions. Set aside and cool.
In a large mixing bowl, combine the cooled quinoa, eggs, shredded mozzarella, and garlic. Season with sea salt and black pepper.
Line a baking sheet with parchment paper. If you want a firmer crust, make smaller individual round pizzas, spreading the mixture out with your fingers. Or, you can spread the mixture out over the entire baking sheet into one large rectangular pizza, about 1/4 inch thick. Bake for 15-25 minutes or until golden and firm.
Makes enough for 1 full baking sheet or 4 individual round pizzas
