Here is a simple recipe for unsweetened coconut milk. For all those tired of nut milks like almond, this is a great, easy, and affordable alternative you can make at home.
Heat 4 cups of water until warm.
Add 2 cups of unsweetened coconut flakes to a blender. Pour the warm water over the coconut flakes, cover but still allow any heat or steam to escape, and blend until smooth.
Place a strainer over a bowl and line it with cheesecloth or a thin cloth (or use a nut bag), strain the coconut mixture. Once most of the liquid has strained into the bowl, gather the sides of the cheesecloth or cloth, and gently squeeze to get any remaining liquid out. Let cool and store in the fridge for up to 4 days.
