This recipe for fish cooked in parchment paper creates little packages of summer deliciousness. Cooking fish in parchment is so easy and allows the ingredients to create a bright and delicious sauce for the fish to soak up.
Preheat the oven to 400 degrees.
Place each fish fillet in the center of a piece of parchment paper and sprinkle it with the sea salt and black pepper. Drizzle 1/2 tbsp olive oil over the top of each fillet. Top each fillet with half of the garlic and half of the sliced shallot.
Next, add the tomatoes and basil to the top of the fish fillet.
Lastly, add some fresh basil leaves to each package.
Brush the egg wash around the edge of the parchment paper and fold it in half. Carefully fold the edge of the parchment paper under and around the fish to make a package. Place the package on a sheet pan and cook for 12 to 15 minutes, until the fish is cooked through.
