This recipe for Carrots with Black Sesame + Ginger from Gwyneth Paltrow's, It's All Good Cookbook, has been in heavy rotation the past few months. It's one of those recipes you can make on a Sunday and use for various meals throughout the week. And, it's great as a veggie side or mixed in with rice and tofu for a quick stir-fry lunch.
Heat the olive oil in a large nonstick skillet over medium high heat. Add the ginger and cook, stirring constantly, for 30 seconds.
Add the carrot matchsticks and stir to combine. Season with a pinch of sea salt and add 1/4 cup water to the skillet. Cook the carrots until they just begin to soften and the water evaporates, about 5 minutes.
Stir in the sesame oil, soy sauce, and black sesame seeds.
