Costa loves muffins and baked goods, so I wanted to make him a healthier version of my banana bread that he could enjoy for breakfast or for a snack. This one is made with whole wheat flour, coconut oil, coconut sugar, and lots of bananas. Costa came home from school today and first thing, gobbled up a slice of warm banana bread straight from the oven. Delicious.
Gather your ingredients.
Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan with coconut oil and dust with flour.
In a standing mixer bowl, combine the coconut oil and coconut sugar on medium. Add the eggs and vanilla and mix until combined.
In a medium bowl, combine flour, baking soda, and salt and stir into the coconut/sugar mixture until smooth.
Fold in the yogurt and smashed bananas. Gently mix until combined.
Spread evenly into the prepared pan.
