This salad is sweet, crunchy, salty, and creamy all at once. Thrown together in less than ten minutes, it's a perfect dish for hot summer days and nights. The key is all in the ingredients. Use the best you can find.
In a bowl, combine the champagne vinegar, olive oil, and a little drizzle of honey. Whisk until emulsified. Season with salt and pepper to taste. Toss the onions into the dressing and set aside.
On a large platter or cutting board, arrange the watermelon chunks. Drizzle a little bit of the champagne vinaigrette and onions on top of the watermelon. Sprinkle a little Maldon salt directly on the watermelon.
Next, start to generously crumble the feta on top.
Scatter some small basil leaves throughout. Drizzle more vinaigrette and onions on top of the feta and basil.
