Description

This is one of those simple sauces you can put on anything. Pasta, chicken, fish, really good bread. I served it with Cappello's GF Gnocchi and it was summery and delicious.

Step 1

In a medium-sized pan over medium heat, place the olive oil and onion. Sauté until the onion is soft and translucent, about 3 minutes. Add the garlic and cook for another minute or so. Add the chopped tomatoes and zucchini and cook for 15 minutes or until the tomatoes break down into a sauce consistency. Taste and season with sea salt and black pepper.

Toss with your favorite pasta or gnocchi, or serve over some grilled chicken or oven roasted fish. I served it here with some gnocchi and topped the dish with fresh basil leaves. Enjoy!
