Description

The success of any salad like this is the quality and flavor of the ingredients. So, try to get to your local farmers market and see what you can get your hands on and what is in season. Feel free to swap out the plum and/or apricot for nectarines or peaches if that is what looks and tastes best.

Divide the tomato, plum, apricot, mozzarella, and basil between two individual bowls. Top with a generous pinch of sea salt and black pepper. Finish with a drizzle of balsamic vinegar and olive oil. Serve immediately.
