Made these semi healthy oatmeal cookies for Costalito today. They are soft, delicious, and filled with chia seeds, goji berries, and chocolate chips. 

Get Started

Gather your ingredients. Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Place the chia seeds in a small ramekin and soak in 3 tbsp water. Place the goji berries in another ramekin and soak in 1 tsp water.

Sift together the flours, baking powder, and a pinch of sea salt.

In a medium bowl, whisk together the avocado oil, brown sugar, egg, and vanilla. Add flour mixture, and stir to combine.

Carefully fold in the oats, chia seeds, goji berries, and chocolate chips.

Using two tablespoons of dough per cookie, roll into balls; place on two baking sheets lined with parchment paper, 1 1/2 inches apart.
