These Gluten Free Oatmeal Goji Berry Cookies are crispy crunchy deliciousness. Might want to double the batch. They go super quick!
Preheat oven to 375 degrees. In a small saucepan, place the goji berries and 1/4 cup water. Simmer until all water has been absorbed. Remove from heat.
In a food processor, blend the oats until finely ground.
In a large mixing bowl, combine the oats, flour, sea salt, and cinnamon.
In the bowl of a standing mixer, blend the butter and sugars.
In a small ramekin, mix together the baking soda and boiling water. Add the liquid to the butter mixture. Then, beat in the egg and vanilla.
By hand, slowly fold in the dry ingredients and goji berries.
Roll the dough into 1 inch round balls and place on a parchment or Silpat lined baking sheet. Make sure the balls have space and are about 2 inches apart.
